Lunch break joys~

It's really awesome working during the daytime. Just really adjusting to that whole making arrangements for lunch thing. It's just really awkward for me.

I did work during the day at one point. It wasn't very healthy. It was like Hot Pockets (back when they still used real cheese) and Pringles. And then there was the basement cafeteria. Oh yummy. They had the best chicken fingers and fries. It was like $5 or something? I'd buy that and sometimes go to the drink machine and get a Coke or Sprite or something. And there were the occasional days that we'd use our lunch hour (a whole full hour!!!) to go out to Pizza Hut for the buffet, Applebee's, or even the occasional Chinese buffet.

I was young and it was my first real job. I was just excited about the novelty of either bringing a lunch when I was low on money or going out for lunch with my co-workers when I did have money. Freakin' awesome.

However, for the past 6 years, I've been at home during noon time so lunch was never an issue for me during work. But now it is. It's 7 hours I'm at work and no size of breakfast will hold me over until quitting time nor do I want to be grazing all day at the snack machine. It's neither affordable for me nor healthy.

Plus, I only get 30 mins of break!!!!!!! It's so short!!!!! There's a Burger King down the street as well as a Taco Bell across and down the street.

Umm, no... Cost too much. I don't particularly fancy those two places for regular eating. Plus I'd have to drive to those places as traffic is unfriendly and lunch break is too short.

Hence bringing my own lunch FTW!!!!

I'm onto my 3rd week but I haven't quite gotten into the hang of it, but I'm hoping this week will change things for me. Today, I didn't plan well enough so all I had for lunch was a Granny Smith apple and a package of Nekot crackers/cookies that I nibbled on at my desk during my lunch break while I worked. It was yummy, but not satisfying.

So after work, I dropped in at my local grocery store where they seriously know me by name in hunt for some overpriced chicken that I would gladly pay the price for so that I would have something to cook for dinner and later lunch the next morning. I got lucky and found some 1.25lb packages of turkey breast fillets for $2 each. I grabbed the two left and took some things I found in the pantry and turned it into this:

Well, it's not the most beautiful lunch. Got a lovely half of a turkey breast fillet (those things were huge!), green beans cooked with little bits of bacon (I think I actually did it right this time) and some stuffing mix from a box (somehow I made this and it tasted awesome like the real thing). I tasted a small sampling of it for my supplementary dinner and it was all very delicious. Hopefully, that'll transfer over to 2 lunches that'll taste very good at work.

There's enough left that my mom could eat some for dinner and also possibly take some to work with her as a lunch as well. Friday, I'll have to figure out something new.
